Elizabeth is sixteen and plays in five bands. Somewhere in the chaos, she and her dad bake nine cookie flavors a week. Big cookie. Less sugar.
My favorite cookies have always been the big, thick NYC-style ones, crisp on the edges and soft in the middle. That’s what we set out to make, and every one of ours weighs a massive 140 grams!
We also wanted you to finish one and still want the next. So we use less sugar than a traditional cookie and let the good stuff carry the flavor. That’s what we mean by just the right amount of sweetness.
Oh, by the way… Half the menu is named after songs and bands I love: Communication Breakdown, The Lemon Song, The Velvet Underground. My dad and I will always take the cookies seriously but keep everything else fun. The names are a big part of that, and we hope they make you smile too!
Two things we take seriously.
Two days on ice. Every single batch.
We didn't plan this, we found it by freezing a batch we should have baked immediately, and the frozen one ended up coming out better.
Here's what's actually happening in there: as the dough ages, sugar concentration rises for deeper browning, while the butter solidifies and absorbs fully into the dough. That's where the texture comes from. It's also the whole reason for the Thursday cutoff, and why we can't bake you a cookie right away.
- 01 Prep ' Mix. We hand-mix our cookie dough, starting with creaming the butter and sugar before adding in our other secret ingredients.
- 02 Freeze ' Rest. 48 hours on ice once the dough is done being weighed and shaped, giving it full hydration for a perfectly balanced flavor.

Bake ' Decorate. We bake the cookies in small batches, then garnish with toppings and pipe in our homemade fillings. After they’ve cooled off, we package them with care and deliver them to you the next morning! Sweet things come to those who wait!
